Darlington is set to welcome a brand‑new addition to its historic Market Square as The Chopping Block, founded by Ory Vanes and Matt Waistell, officially opens its doors.
The pair bring a powerful blend of experience to the venture. Ory comes from a long career in hospitality, while Matt’s background spans commercial property and, more recently, hospitality venues. Together, they share a clear mission: to bring butchery back into the heart of the town centre and champion the very best locally sourced products.
“We’re passionate about locally sourced products,” says Ory. “Traditional butchery is a dying art, and we only want to sell the very best meat in our shop. There was a vacant space on Darlington Market Square, underneath the indoor market, and we thought we should just go for it as it’s a great location. It allows us to supply our own businesses, provide quality meat to the town, and create jobs.”
To deliver on that promise, the owners have invested heavily in a high‑spec fit‑out and assembled a skilled team. The shop has already appointed a highly experienced master butcher, a shop manager, and two apprentices through Darlington Borough Council’s Trailblazer scheme, supporting local employment and skills development.
Local businesses have been quick to respond, with several already signing up to have their meat supplied by The Chopping Block – and more partnerships are in the pipeline.
Ory continues: “We wanted to bring a butcher shop right into the heart of the town centre, support local businesses, and keep community money circulating in the local economy. Our goal is to grow into a business offering a huge range of products and acting as a hub for other local suppliers.”
The Chopping Block opens with a commitment to quality, community, and craftsmanship – a welcome revival of traditional butchery for Darlington.
The Chopping Block will open its doors to the public Tuesday to Friday, 8:30am–4:30pm, and Saturdays, 8:30am–3:30pm.
